Yield: 4 Servings
4 each 6-ounce Salmon fillets
1/4 cup Orange juice
2 Tsp. Olive oil
1 1/2 cup Pineapple chunks, chopped
2 ½ tablespoons Cilantro, chopped
1/2 each small red onion, diced
1 1/2 cup Black beans, cooked
1 ea. Jalapeno pepper, large, seeded and diced
to taste salt and pepper
Method of Preparation:
1. Dip both sides of fish into orange juice. Set aside.
2. In a medium sauté pan, heat 2 tsp. olive oil and allow to heat about 1 minute. Add Salmon fillet to pan, skin side down and cook about 4 minutes. Flip fillet over once and cook for 3 minutes more.
In a medium bowl, combine pineapple, cilantro, red onion, black beans and jalapeno.
Season with salt and pepper, to taste. Top each fillet with 3/4 cup relish.
