Salmon in a bag

Serves: 1

Salmon filet



4 oz. Salmon Fillet, Wild Caught

2 oz. Orange Juice

1 tbsp. Lime Juice

1 tsp. Ground Ginger

1 tsp. Ground Mustard

Salt and Pepper to taste

Parchment paper, about 10 inches in length

1 cup wheat berries, cooked

1 cup vegetables, cooked

Parchment salmon


Method of Preparation:

1. Preheat the oven to 375 degrees. Fold the parchment paper in half, then unfold it. Place the salmon on one half of the parchment and crimp up the sides forming a bowl shape.

2. Pour the lime juice over the salmon fillet and then season with Ginger, Mustard, Salt and Pepper.

3. Fold the parchement paper over and crimp the edges until you form a packet. Place each "fish packet" onto a baking sheet and place into the oven for about 25 minutes.

4. To serve, cut open the packet, place on a plate with 1 cup wheat berries and 1 cup seasoned vegetables.
