GREEK STYLE STUFFED TOMATOES

 

These delicious Greek Style Stuffed Tomatoes are the perfect appetizer or snack!! Serves: 1

 

Ingredients:

2 ea. Roma Tomatoes, seeds removed but chop the pulp

2 tbsp. red onion, chopped

1/4 ea. Cucumber, chopped

2 tbsp. Feta Cheese

1 tbsp. Parsley

1 tbsp. Basil, chopped

1 tbsp. Mint, chopped

1 tbsp. Red Wine Vinegar

Pepper to taste

 

Method of Preparation:

1. Slice off tops of tomatoes and hollow them out, seeds and pulp removed; set aside. In a medium bowl, combine all other ingredients and stir until well combined.

2. Spoon mixture into hollowed out tomatoes & chill for at least 15 minutes. Serve cold.
