This delicious vegan dish will leave you wanting more!
One Small White Onion, sliced
1 Tsp Sea Salt
Freshly Ground Pepper, to taste
4 Cups Cauliflower or 1 medium head
3 Cups Unsweetened Almond Milk
3 Cups Broccoli Florets, finely chopped
1 Tbsp Onion Powder or 1/2 Tsp of nutmeg and a couple shakes of Cayenne Pepper
Saute onion, salt, and pepper in large sauce pan for five minutes or until golden brown. Add 1 tablespoon of water to avoid burning. Continue to add small amounts of water as needed.
Add Cauliflower and Almond Milk, cover, bring to a boil. Simmer for 10 minutes or until Cauliflower is soft.
Add half of the Broccoli.
Pour mixture into a blender or food processor and blend until smooth. Return to pan.
Stir in the remaining Broccoli. Add either 1 tablespoon onion powder OR 1/2 teaspoon of Nutmeg and a couple shakes of Cayenne Pepper to taste.
Cover and cook for 10 more minutes.
