A healthy and delicious serving of vegetables!!
8 cups Mixed Greens (I like turnip, collard, and mustard greens)
2 Tbsp. Olive oil
4 Ea. Garlic Cloves, chopped
1 16oz. can Chick Peas, drained and rinsed
1 16oz. can White Beans, drained and rinsed
2 Tsp. Crushed Red Pepper Flakes (optional)
Salt and Pepper to taste
Method of Preparation:
1. In a large pan, heat half of olive oil over medium-high heat. Add half each of garlic, mixed greens, and beans. Saute for about 4 minutes. Season with salt and pepper to taste, add crushed red pepper if desired. Remove from pan and set aside.
2. Repeat the cooking process from step one and serve immediately.
