CARIBBEAN PINEAPPLE CHICKEN

CARIBBEAN CHICKEN

If you can't afford a Caribbean vacation, at least take your taste buds on one!!

Serves: 1

Ingredients:

1 ea. Chicken Breast, boneless and skinless- seasoned with blackening seasoning

1/2 cup Black Beans

1/2 cup Pineapple Chunks, roughly chopped

1/3 cup Yellow Onion, chopped

1/2 ea. Red Bell Pepper, thinly sliced

1/2 ea. Green Bell Pepper, thinly sliced

1 tbsp. Coconut Oil

Caribbean Seasoning, to taste

Salt and Pepper, to taste

 

Method of Preparation:

1. Heat half of the Coconut Oil in a medium saute pan over medium-high heat. Place onion and bell peppers into the pan and cook until fragrant, about 3 minutes, stirring constantly. Season with salt and pepper, to taste. Remove from pan and set aside.

2. Heat the remaining Coconut Oil and seasoned chicken breast. Cook chicken breast for about 4 minutes, flip once and continue cooking for another 4 minutes. With about 2 minutes of cooking time left for the chicken, add vegetable mixture and pineapple to the pan. Heat until a thermometer inserted into the chicken reads 165 degrees. Serve immediately on a plate with heated black beans.
