Scrambled Eggs with Basil, Goat Cheese, and Asparagus


Makes 1 serving


2 Eggs

1/3 cup Onion

1/2 cup Asparagus

1/2 cup Brussel Sprouts

2- 3 leaves Fresh Basil

1 strip of Bacon

1- 2 tsp Goat Cheese

1 tsp Coconut or Grapeseed Oil

Pepper to taste

To prepare, heat oil in a non-stick skillet over medium heat. Add onion, asparagus, and sprouts; saute stirring occasionally. In a small bowl, wisk eggs. Pour eggs and basil over vegetables and cook. Cut the bacon into small pieces and fry in a separate skillet until desired crunchiness.

Plate eggs and veggies, sprinkle with bacon and goat cheese, and serve. Delish!

*I love pepper, so I add that in with the veggies while they're cooking. Of course, you can play around with the amounts and varieties of spices and vegetables to make it your own. Enjoy!
