Who says you can't have dessert for breakfast? This Breakfast Banana Split looks like a dessert favorite and tastes almost as sweet! But don't worry, it's packed with protein, healthy carbs, vitamins, and antioxidants that your body needs. So ditch the pancakes and eat this healthy treat instead!
2 whole Bananas split lengthwise
1 cup rolled oats
1 cup non fat Greek yogurt
½ cup low fat coconut milk
1 Tbs. maple syrup
Dash of cinnamon
½ cup fresh blueberries
1/3 cup unsweetened coconut flakes (Bob’s Red Mill)
½ cup fresh pitted cherries, chopped
4 mint leaves, chopped (optional)
Method of Preparation:
1. In a medium container, combine oats, yogurt, coconut milk, maple syrup, cinnamon, blueberries and coconut flakes and mix until well combined. Refrigerate overnight. (The mixture will thicken to resemble ice cream once chilled)
2. Split a banana lengthwise and scoop 1 cup of the oatmeal mixture between the slices, top with cherries and garnish with mint, if desired. Serve cold.
