Butter Roasted Cauliflower


If you don't like cauliflower, I'm giving you a reason to give it another try! This recipe is simple and amazing!

1 large head of cauliflower, trimmed and cut into 2 inch florets (5 cups) 
2 Tbsp grassfed butter, melted
1/4 teaspoon salt
1/4 teaspoon pepper

1. Preheat oven to 400 degrees. line cookie sheet with parchment paper or silicone mat
2. Spread cauliflower onto prepared baking sheet. Brush each floret with some melted butter and sprinkle with salt and pepper. 
3. Roas for 30 minutes. flip cauliflower over and roast again until tender and golden (about 10 mins)

Per 2/3 cup serving: 82 cal, 7g fat, 3 g protein, 1 carb
